Spiced drumsticks with mango salsa and noodles


Noodles with chicken drumsticks and a salsa of mango, salad onion and lime.

Directions

  1. Preheat the oven to 200 ° C.
  2. Spoon the chicken drumsticks with the red curry powder, oil, pepper and salt.
  3. Spread over a baking sheet covered with parchment paper and bake for approx. 25 minutes in the middle of the oven. Turn halfway.
  4. Meanwhile, make the salsa. Cut 2 salad onions in wafer thin rings. Clean the lime, grate the green skin and squeeze half of the fruit.
  5. Cut the other lime into wedges. Peel the mango and first cut the flesh from the kernel and then into small cubes.
  6. Mix the salad onion, the lime zest and juice and the mango in a small bowl. Season with pepper and salt.
  7. Bring a pot of water with a little salt to the boil. Break the noodles above and cook for 5 minutes.
  8. Drain and rinse cold under running water. Drain well in a colander.
  9. Slice the garlic finely and the rest of the salad onion into rings.
  10. Heat the oil in a stirring stir fry the garlic and Japanese wok vegetables for 3 minutes on a high heat.
  11. Add the noodles, salad onion and wok sauce and stir fry for 3 minutes.
  12. Divide the noodles, chicken drumsticks and salsa over the plates and garnish with the lime slices.
