Directions

  1. Chop the onion and finely chop the garlic. Peel the potatoes and cut them into cubes. Heat the olive oil in a soup pot and gently fry the onion and garlic. Fry the potato cubes for 2 minutes while you are scrambling. Put the kale and paprika powder through and fry for another minute.
  2. Pour in the vegetable stock and let the soup simmer for another 15 minutes. Stir frequently so that the potato cubes fall apart and bind the soup.
  3. Cut the tomatoes in four and remove the seeds. Cut the flesh into cubes. Serve the kale soup in wide bowls and divide the cubes of tomato over it.
