Heat the oil in a casserole and fry the onion on a low setting in soft and sticky for about 5 minutes. Add the garlic and turnip and stir fry for a few minutes.

Add the apricots, chilli and spices and pour in the stock. Bring to the boil and leave to simmer for about 10 minutes at a low setting.

Add the vegetarian pieces and cook for another 5 minutes. Sprinkle the dish with the parsley and serve immediately.
