Preheat the oven to 200 ºC.

Place half of the defrosted slices of dough in a square on a baking sheet covered with parchment paper. Leave the edges slightly under pressure.

Place half the slices of cheese from the dough, leaving the edges free. Roast the lemon and grate the yellow skin.

Thaw the spinach, put in a sieve and push out the moisture with a spoon.

Cut the onions into thin rings. Heat the butter in a frying pan and fry the onion in 7 minutes until golden brown.

Split the egg.

Put the spinach in a bowl and mix in the onion, protein and lemon zest. Season with pepper and salt.

Spread over the dough and over the rest of the cheese. Cover with the rest of the thawed dough.

Brush the dough borders with egg yolk and fold the edges. Make a slash in the dough with a fork. Brush with the rest of the egg yolk.

Bake in the middle of the oven in about 40 minutes until golden brown and al dente.
