Sprouts with apple sticks
Stir-fried Brussels sprouts with apple sticks, lemon zest and ginger syrup.

Clean the sprouts and slice them with the thin slicer of the food processor. Or if you use flowersprout: cut them into quarters.

Halve the apples and cut into quarters. Remove the cores and cut the parts into wafer-thin slices.

Cut these slices into wafer-thin strips the size of matchsticks (julienne).

Grate the yellow skin of the scented lemon, halve the fruit and cut 1 half into 4 parts. Keep these separately for garnishing.

Use the other half to sprinkle the apple, to prevent discoloration.

Use your hands to gently mix the apple with the lemon juice.

Ris the leaves of the sprigs of thyme. Heat the oil and ginger syrup in a stir-fry stir-fry the sprouts and thyme 3 min.

Stir in the lemon zest and the raisins from the heat. Divide the apple over the sprouts and scoop. Garnish with the lemon wedges.
