Cut the steak into cubes and sprinkle with freshly ground pepper.

Peel the shallots and cut them.

Heat the butter and fry the steak cubes around brown in 2 minutes.

Remove them from the pan and keep them warm.

Fry the shallots for 2 minutes in the remaining shortening.

Add the red wine and cooking cream and leave to reduce the sauce thickness in 2 minutes.

Add the forest fruit jam and add salt to taste.

Warm the meat in the sauce.

Sprinkle the dish with parsley.
