Steak with shallot-wine sauce

Preheat the oven to 100ºC.

Sprinkle the meat around with salt and pepper. Heat 1 teaspoon of butter and 1 tablespoon of oil on medium height until the butter is no longer bubbling.

Turn the heat source a little higher and scald the steaks around in a few minutes. Place the meat on the baking sheet and slide 5-10 minutes before serving in the oven.

In the meantime, heat again 1 tablespoon of oil in the pan and fry the leaves sage 20 seconds per side. Put them on kitchen paper.

Heat the sauce just before serving, but do not boil. Beat the rest of the butter with a whisk to bind the sauce.

If necessary, add some extra butter for a thicker sauce and season to taste with salt and pepper.

Place the steaks on preheated plates, add a spoon of shallot sauce and garnish with a sage leaf.
