Steak with shiitake sauce with green asparagus and tagliatelle

Cut the hard ends of the asparagus and peel the bottom. Cut the asparagus tips 5 cm off and cut the bottom edges into thin slices.

Boil the asparagus tips in a saucepan with plenty of boiling water and a little salt in 4 minutes al dente. Drain them in a colander.

Cut the hard pieces of the shiitake stems and finely chop the shiitakes with stalk.

Preheat the oven to 100 ° C.

In a pan, bring plenty of water to the boil with a little salt.

Season the steaks with salt and pepper.

Heat the butter in a frying pan until the foam drips and fry the steaks on high heat in 1-1.5 minutes per side brown.

Place the steaks in a baking tin or baking dish and let them simmer for 4-6 minutes in the oven.

Add the tagliatelle and the asparagus slices to the boiling water and cook the pasta in 3-4 minutes until al dente.

Stir in the finely chopped garlic and shiitakes through the shortening of the steaks and fry them in brown for 2-3 minutes.

Stir in the soy sauce and meat fondue and cook the whole into a nice gravy.

In the meantime, season the asparagus tips with olive oil and roast them in a hot grill pan for 2 minutes until they have brown stripes all around.

Drain the tagliatelle. Spoon the pasta in the middle of warm deep plates. Spoon the gravy and place the steaks on it.
