Directions

  1. Cut the hard ends of the asparagus and peel the bottom. Cut the asparagus tips 5 cm off and cut the bottom edges into thin slices.
  2. Boil the asparagus tips in a saucepan with plenty of boiling water and a little salt in 4 minutes al dente. Drain them in a colander.
  3. Cut the hard pieces of the shiitake stems and finely chop the shiitakes with stalk.
  4. Preheat the oven to 100 ° C.
  5. In a pan, bring plenty of water to the boil with a little salt.
  6. Season the steaks with salt and pepper.
  7. Heat the butter in a frying pan until the foam drips and fry the steaks on high heat in 1-1.5 minutes per side brown.
  8. Place the steaks in a baking tin or baking dish and let them simmer for 4-6 minutes in the oven.
  9. Add the tagliatelle and the asparagus slices to the boiling water and cook the pasta in 3-4 minutes until al dente.
  10. Stir in the finely chopped garlic and shiitakes through the shortening of the steaks and fry them in brown for 2-3 minutes.
  11. Stir in the soy sauce and meat fondue and cook the whole into a nice gravy.
  12. In the meantime, season the asparagus tips with olive oil and roast them in a hot grill pan for 2 minutes until they have brown stripes all around.
  13. Drain the tagliatelle. Spoon the pasta in the middle of warm deep plates. Spoon the gravy and place the steaks on it.
  14. Garnish with the asparagus tips.
