Use a sharp knife or peeler to cut 3 strips of yellow lemon zest.

Peel the pears with a sharp knife or peeler. Let the stalks sit on it.

Put the cooking pears in a large pan and add the wine. Fill with water until the pears are just below.

Add the lemon strips, sugar and the cinnamon stick and bring to the boil. Cook for 1 hour on low heat. Serve hot or cold. Bon appétit! .
