Stir-fried endive with spring onions and tomato

Cut half the crop endive from the top to the stalk in broad strips. Rinse the endives endive in a colander under cold water and let it drain. If possible, turn the endive dry in a salad spinner. Cut the tomatoes in four and remove the seeds with moisture. Cut the flesh into strips.

Cut the spring onions into 2 cm pieces. Cut the garlic into slices and the basil leaves into strips. Heat the olive oil in a stirring stir fry the spring onions and garlic for 1-2 minutes until softened. Add the endive hand by hand and let it shrink in 2-3 minutes. Put strips of tomato and basil through and warm for a while.
