Fresh Tomato Sauce

Chop the onion coarsely. Finely chop the garlic and pepper. Tear the basil leaves.

Cross the tomatoes with a sharp knife on the convex side. Immerse them for 10 seconds. in a pan with plenty of boiling water.

Transfer them to a colander and rinse them with cold water. Pull the skin off the tomatoes. Cut the tomatoes in four and remove the seeds.

Cut the quarters tomato into coarse blocks. Heat the oil in a frying pan and gently fry the onion and the garlic for 8 minutes.

Add the red pepper, pieces of tomato and capers and heat the sauce for a few minutes on medium heat. Add salt to taste.

Do not let the sauce boil at all, then the specific taste of this sauce will disappear.

Hot use: mix the sauce directly with the basil.

Cold use: let the sauce cool down before the basil is added. This way the basil retains its beautiful fresh color and taste.
