Prepare the noodles according to the instructions on the package.

Drain, rinse cold water and drain.

Heat the oil in a wok or frying pan and stir fry the leek for 2 minutes at medium height.

Cut the shrimp in half lengthwise and add to the leek with the wok sauce.

Stir fry until the shrimps are light pink.

Cut the noodles a few times and add last.

Stir fry for a few minutes and pour in the coriander and peanuts just before serving.
