Wash the tomatoes. Cut off the bottom and the cap of the tomatoes. Roast the tomatoes with a tablespoon and sprinkle on the inside with salt.

Uncrust the cheese and cut into small pieces. Chop the olives coarsely. Cut the rocket into small pieces. Beat a dressing of vinegar, oil salt and pepper. Mix the cheese, pieces of tomato, olives and arugula with the dressing.

Fill the tomatoes with the salad.
