Stuffed tomatoes with goat's cheese


Tomatoes stuffed with olives, soft goat cheese and arugula.

Directions

  1. Wash the tomatoes. Cut off the bottom and the cap of the tomatoes. Roast the tomatoes with a tablespoon and sprinkle on the inside with salt.
  2. Uncrust the cheese and cut into small pieces. Chop the olives coarsely. Cut the rocket into small pieces. Beat a dressing of vinegar, oil salt and pepper. Mix the cheese, pieces of tomato, olives and arugula with the dressing.
  3. Fill the tomatoes with the salad.
