Summery pasta salad with smoked chicken fillet


A delicious pasta salad with smoked chicken breast, spring onions, nectarines, cashew nuts, carrots julienne and white cabbage.

Directions

  1. Cook the fusilli according to the instructions on the package al dente and let cool under cold running water.
  2. Meanwhile, cut the spring onion into rings. Cut the nectarines in half with a sharp knife.
  3. Loosen the halves carefully in the opposite direction and remove the wick. Cut the flesh into segments.
  4. Chop the cashew nuts coarsely.
  5. Halve the lemon and press 1 tbsp juice. Make a dressing of the yogurt, mayonnaise, lemon juice, pepper and possibly salt.
  6. Mix the pasta with the nectarine, nuts, chicken breast, carrot julienne and white cabbage. Spoon the dressing well and garnish with the spring onion.
