Sweet and sour cucumber relish with dill

Directions

  1. Grate the cucumber coarsely and collect in a fine sieve. Sprinkle with salt and cover. Let rest for about 1/2 hour and press the spoon out of the cucumber with a spoon.
  2. Mix the grated cucumber with the pickles, shallot and dill.
  3. Season the relish with a few drops of white wine vinegar, olive oil and pepper. Keep covered in the refrigerator.
