Sweet and sour tomato soup with chicken

Bring the stock with the tomatoes, the green of the spring onion (keep the white separate) and the red pepper to the boil. Cook covered for 15-20 minutes at a low setting.

Purée the soup with a hand blender or in a blender and sieve the soup afterwards so that the tomatoes are out.

Bring the soup back to the boil and add to taste sherry, soy sauce, ginger syrup, fish sauce and chili sauce and then the sugar and sesame oil.

Put the chicken strips through and cook gently for about 5 minutes. In the meantime, heat the sunflower oil and fry an omelette of the egg.

Cut the omelette into small strips and add to the soup. Sprinkle the soup with the white of the spring onions and the fried onions. Serve immediately.
