- 
                                Beat the egg yolks with the sugar and the cinnamon in a few minutes to a slight foamy mass.
- 
                                Beat the egg whites in a different bowl and gently spoon in the frothy egg yolks.
- 
                                Heat the butter in a frying pan with non-stick coating and pour in the egg foam.
- 
                                Place the pan on the heat source, preferably on a flame distributor, and let the omelet with the lid on the pan in about 10 minutes.
- 
                                Chop the caramel coarsely and divide this over the omelette. Leave to cook for another 5 minutes so that the caramel melts.
