Directions

  1. Beat the egg yolks with the sugar and the cinnamon in a few minutes to a slight foamy mass.
  2. Beat the egg whites in a different bowl and gently spoon in the frothy egg yolks.
  3. Heat the butter in a frying pan with non-stick coating and pour in the egg foam.
  4. Place the pan on the heat source, preferably on a flame distributor, and let the omelet with the lid on the pan in about 10 minutes.
  5. Chop the caramel coarsely and divide this over the omelette. Leave to cook for another 5 minutes so that the caramel melts.
