Sweet potato from the oven

Preheat the oven to 150 ° C.

Peel the sweet potatoes and cut into fries of about 1½ cm thick.

Divide the French fries over a baking sheet covered with baking paper. Make sure the fries do not touch each other.

Sprinkle with the oil and bake in the middle of the oven for about 1 hour until golden brown. Meanwhile, grate the Parmesan cheese.

Take the potatoes out of the oven after one hour and increase the oven temperature to 180 ° C. Divide the cheese over the potatoes.

Put back in the oven and bake for about 10 minutes.

In the meantime, finely chop the chives and mix with the yogurt and mayonnaise to a dip. Leave to stand in the refrigerator until use.

Take the sweet potatoes out of the oven and serve with the dipping sauce.
