Cut the courgettes in half lengthwise and then cut into half-moons. Cut the onions into half rings. Put the vegetables in a bowl and sprinkle the salt over it, let this stand for at least 2 hours.

Bring the vinegar together with the sugar, celery, turmeric and the mustard seeds to a boil and simmer for 5 minutes on medium heat. Spoon the vegetables in a colander, rinse them well and let them drain.

Dab the vegetables dry with paper towels. Put them in a bowl and pour the sugar-vinegar mixture over them. Leave it in for a night.

Bring to the boil the next day and let it simmer for 5 minutes on low heat. Scoop the vegetables from the pan into the jam jars with a slotted spoon.

On medium heat, reduce the residual cooking liquid to half, leaving a syrupy liquid. Pour this over the vegetables in the jam jars.
