Toast with smoked herring and radish

Cut the cucumber and radish into thin slices and the onion into wafer-thin half rings.

Put in a bowl and add the vinegar. Leave at least 10 minutes.

Meanwhile, roast the bread. Mix the mayonnaise and mustard, spread the toast with it and spread the arugula over it.

Remove the skin from the herring and spread over the toast.

Drain the radish and cucumber and garnish with the toast. Serve the rest.
