Tofu-bitterballen with mustard sauce

Heat the frying oil to 170: C.

Finely chop the tofu and grate the carrots. Chop the onion and grate the ginger. Knead in a bowl of tofu, carrot, onion, ginger, flour and soy sauce until cohesive mass.

Knead the mass to 15 balls and fry in portions in 4 to 6 minutes until golden brown and crispy. Drain on kitchen paper.

Beat in a bowl of mustard, lemon juice and apple juice to a sauce. Season with sea salt.

Serve the tofu-bitterballen hot or cold with mustard sauce.
