Tomato courgette soup


Vegetarian soup of tomatoes and courgettes with spring onions.

Directions

  1. Cut the onion into half rings. Heat the oil in a soup pot and fry the onion for 3 minutes.
  2. Add the tomato cubes and an extra can of water per 2 cans of tomato cubes.
  3. Stir in the tapenade and bring to the boil.
  4. Cut the zucchini into cubes.
  5. Add the bouillon tablet and zucchini to the soup and cook for 4 minutes until the zucchini is al dente.
  6. Cut the spring onion into rings. Stir in the soup just before serving. Season with salt and pepper.
  7. Spoon the soup into bowls.
