Tomato courgette soup
Vegetarian soup of tomatoes and courgettes with spring onions.
Cut the onion into half rings. Heat the oil in a soup pot and fry the onion for 3 minutes.
Add the tomato cubes and an extra can of water per 2 cans of tomato cubes.
Stir in the tapenade and bring to the boil.
Cut the zucchini into cubes.
Add the bouillon tablet and zucchini to the soup and cook for 4 minutes until the zucchini is al dente.
Cut the spring onion into rings. Stir in the soup just before serving. Season with salt and pepper.
Spoon the soup into bowls.
