Tomato pie
French savory pie with tomato, crème fraîche, montres and thyme. Perfect for a vegetarian lunch.

Preheat the oven to 200 ° C. Roll the slices of dough together and roll them out again into a thin round piece of approx. 24 cm. Grease the quiche mold and cover with dough. Press firmly on the edges.

Stir in the crème fraiche and mustard and spread over the cake base. Ris the thyme leaves from the twigs, sprinkle with pepper and salt if necessary. Cut the tomatoes into thick slices. Place the tomatoes in a circular pattern in circles.

Sprinkle with pepper and salt and drizzle the basil oil over it. Slide the cake 1 ridge under the center of oven and bake in 25-35 min. Golden brown. Allow to cool to lukewarm.

If you serve the cake lukewarm or cold, you can garnish the cake with a fresh herb salad: just before serving, mix basil leaves and fresh mint with coarsely chopped parsley, some chives and a few drops of lemon juice and olive oil.
