Tompozen with summer fruit
A tasty recipe. The dessert contains the following ingredients: puff pastry (thawed), egg yolk, pine nuts, red fruit (strawberries, raspberries and / or berries), orange (or rose liqueur (slijter)), crème fraîche and vanilla sugar.

Line the baking sheet with baking paper. Halve the slices of puff pastry and place them at some distance from each other on the baking tin. Prick half of the slices with a fork in several places.

Beat the egg yolk with 1 tbsp water and brush the other half of the slices of puff pastry with the beaten egg. Sprinkle the pine nuts over them and press them very lightly into the dough.

Put the baking tin in the middle of the oven and bake the slices for about 15 minutes until golden brown and done. Allow the slices of dough to cool on a rack.

In a bowl, mix the fruit with the rose or orange liqueur.

Let the fruit drain into a sieve. Catch the moisture. Beat the crème fraîche with the vanilla sugar lightly. Beat the collected fluid through.

Keep a quarter of the crème fraiche behind and spread the rest evenly over the puff pastry slices without pine nuts. Divide the fruit over it. Put a spoonful of the cream left behind on each tartlet and place the slices of puff pastry with pine nuts on top.
