Directions

  1. Puree the blueberries until you have a nice smooth mixture. For an extra smooth glaze you also pass the puree through a sieve. Add a little lemon juice to the puree and gently stir in the icing sugar with a whisk.
  2. Put the Muscovite turban on a nice plateau and spread the glaze over the top. Let it slowly run down for a nice effect. Chop the pistachio nuts and sprinkle over the turban. Finish with raspberries and leaves of mint.
