Cut the veal schnitzel into wafer thin strips and put them in a bowl. In a jug mix with cream and mustard and tarragon.

Fry butter in a pan and quarter of veal strips, stirring in 3 min. Add a quarter of cream mixture and reduce the amount of salt. Season the taste with salt and pepper.
