Directions

  1. Grind the flesh of the watermelon in a food processor to juice.
  2. Put the mint, half of the lime and 2 teaspoons of cane sugar in a large glass. Stamp this with the back of a wooden spoon.
  3. Add the melon juice, add ice cubes, the rum and a splash of sparkling water and stir well.
  4. Garnish the mojito with extra lime and a sprig of mint.
