Heat 1 tablespoon of the butter and fruit the onion rings with the Provençal herbs in about 5 minutes light brown and soft.

Heat the remaining butter in a thick-bottomed pan and stir in the flour for a few minutes.

Pour in the milk and bring to a smooth sauce while stirring.

Pour in the beer and stir in the cheese until it has melted. Season the cheese sauce with mustard and Worcestershire sauce.

Preheat the oven grill. Roast the bread and place the slices side by side on the baking tray. Divide the onion rings over it and scoop the cheese sauce on it.

Grate in the oven, but do not put the sandwiches too close under the grill. Serve immediately.
