Wholemeal toast with spinach, smoked meat and egg


Toasted wholemeal bread with spinach, smoked meat, egg and mayonnaise.

Directions

  1. Bring a pan of water to the boil and boil the eggs for 5 minutes. Then the egg white is solidified and the yolk is still soft. Rinse under cold running water and peel them.
  2. Meanwhile, put the soy milk, oil, vinegar, mustard and salt in a high cup. Mix in 30 sec. with the hand blender to mayonnaise.
  3. Heat the oil in a frying pan. Add the spinach and let it shrink all the time. Put in a colander and drain.
  4. Meanwhile, toast the slices of bread in the toaster and cut them diagonally in half.
  5. Brush the buns with 1 tbsp of the mayonnaise and spread the smoked meat and the spinach over the slices.
  6. Halve the eggs and put half an egg on each roll. Season with pepper.
