Zucchini salad with pine nuts and currants
A tasty recipe. The vegetarian side dish contains the following ingredients: courgettes (approx. 350 g), red onion (approx. 90 g), olive oil, lemon juice, white wine vinegar, fine sugar, currants, cinnamon powder, salt, pine nuts, dill and freshly ground pepper.

Cut tips of courgettes.

Wash the courgettes and cut into slices of about 1/2 cm.

Peel and chop onions.

Heat oil in frying pan and fry about 3 minutes.

Add the zucchini slices and stir-fry for about 5 minutes.

Add lemon juice, vinegar, sugar, currants and cinnamon.

Season with salt and pepper.

Cook for approx.
-
8 minutes until the liquid has almost evaporated.

Roast pine in dry frying pan until lightly browned.
-
Let the salad cool down in a bowl and let it take a few hours.

Just before serving, finely chop the dill above and cut through with pine nuts..
