Melt the chocolate au bain-marie.

Halve the beets and put in a tall cup. Puree with the hand blender until smooth.

Mix the mashed beets and melted chocolate with a whisk and season to taste with the maple syrup.

Pour the chocolate into a baking tin covered with cling film, cover and allow to cool for about 10 minutes. Then you put the mixture in the refrigerator for 1 hour.

Cut into cubes before serving.
