Airy coffee ice cream
A tasty Italian recipe. The vegetarian dessert contains the following ingredients: eggs (split (protein is not used)), dark caster sugar, espresso coffee (cooled), coffee liqueur (liquorice), mascarpone (soft cream cheese) and Cantuccini cookies (Italian almond cookies).

Bring a large layer of water to the boil in a generous pan. In heat-resistant bowl, whisk with sugar, espresso and liqueur with mixer. Bowl over boiling water and continue to mix until mass thick and foamy. Remove from pan and allow to cool down for about 1 hour.

Untie Mascarpone and airy through espresso-yolk mixture. Mix in coffee cups or firm glasses and cover for 2 hours in deep-freeze. Cantuccini separately as a 'spoon'.
