Directions

  1. Wet the tea towel. Hang a sieve over a bowl and place the tea towel in the sieve.
  2. Pour the yogurt into the tea towel and leave to drain for about 8 hours in a cool place.
  3. Cut open the vanilla pod, scrape out the marrow and stir the marrow through the drained yogurt.
  4. Whisk the cream with the icing sugar and carefully spoon it through the yoghurt.
  5. Brush the watermelon around with honey.
  6. Heat a grill pan on a high setting and grill the pieces of watermelon for about 2 minutes per side until grill marks are visible.
  7. Divide the hanging over 4 bowls and serve with the watermelon and blueberries.
