Almond banana pancakes


Homemade pancakes for breakfast of almond flour with banana and mango pieces with passion fruit.

Directions

  1. Put the mango pieces, passion fruit cubes and the water in a saucepan and heat for 20 minutes on low heat until a fruit spread. Stir frequently.
  2. Put the fruit spread in a container and let it cool down until use.
  3. Mix the almond flour, the ripe banana and the egg in the blender or food processor to a smooth mixture.
  4. Heat the sunflower oil in a large frying pan with non-stick coating and scoop 6 pieces of batter into the pan with a tablespoon.
  5. Bake the pancakes in about 3 minutes brown and done on both sides. Turn them carefully, the batter is not very firm.
  6. Serve with the fruit spread.
