Almond banana pancakes
Homemade pancakes for breakfast of almond flour with banana and mango pieces with passion fruit.

Put the mango pieces, passion fruit cubes and the water in a saucepan and heat for 20 minutes on low heat until a fruit spread. Stir frequently.

Put the fruit spread in a container and let it cool down until use.

Mix the almond flour, the ripe banana and the egg in the blender or food processor to a smooth mixture.

Heat the sunflower oil in a large frying pan with non-stick coating and scoop 6 pieces of batter into the pan with a tablespoon.

Bake the pancakes in about 3 minutes brown and done on both sides. Turn them carefully, the batter is not very firm.

Serve with the fruit spread.
