Apple compote with greek yogurt and walnuts

Directions

  1. Press and grate the lemon.
  2. Cut the fresh basil or mint leaves into thin strips.
  3. Cut the apples into quarters, remove the cores and peel the parts.
  4. Halve the parts and cut these parts in half.
  5. Put the apple pieces in a pan and put the slices of ginger in between.
  6. Divide the lemon zest over it, drop a maximum of two tablespoons of lemon juice and add the apple juice.
  7. Bring everything to the boil and let the apple pieces boil in a cook for 10-12 minutes.
  8. Scoop the apple pieces out of the pan with a slotted spoon, let them drain a little above the pan and scoop them on a plate.
  9. Take the ginger slices out of the pan.
  10. Boil the moisture on high heat until the light starts to become syrupy.
  11. Allow the syrup to cool.
  12. Divide the yogurt over dishes and spoon the apple wedges on it.
  13. Pour the apple syrup over it and spread the walnuts and basil or fresh mint over it.
