Peel the asparagus and cut a piece from the bottom.

Boil them in water with salt and butter added in 12-15 minutes until al dente.

Drain (keep the cooking liquid) and cut into 3-4 cm pieces.

Stir the honey through the mustard.

Mix the egg yolk, a pinch of salt, the white wine vinegar and lemon juice through it.

Mix the oil drop by drop.

Beat well so that all oil is absorbed evenly.

Mix a maximum of 2 tablespoons of asparagus coke.

Then sprinkle the crème fraiche through the dressing.

Spoon the dressing lightly through the asparagus pieces.

Add 1 tablespoon of chopped chives.

Wash the lettuce and spread over the plates.
-
Spoon the asparagus salad on the lettuce.

Sprinkle the dish with the rest of the chives and garnish with lemon wedges.
