Peel the oranges thick and cut the segments from the membranes. Remove any seeds.

Divide the watercress (remove the thick stems) or corn salad over the plates.

Roast the almonds for the dressing in a dry hot skillet. Mix them with orange juice, 3 tablespoons of olive oil and salt and pepper.

Sprinkle half of the dressing over the watercress or lamb's lettuce.

Heat the rest of the olive oil and fry the cheese slices for 1-2 minutes per side on half position.

Put them on the salad and divide the orange wedges and the rest of the dressing. Tasty with toasted white bread.
