Asparagus soup with salmon

Directions

  1. Cut the bottom pieces of the peeled asparagus. Bring these pieces together with the peels in the stock to the boil.
  2. Leave for about 20 minutes at a low setting and pour through a fine sieve. Catch the broth and bring back to the boil.
  3. Cut the peeled asparagus into small pieces and keep the cups separate. Cook the pieces of asparagus in the stock for 5 minutes and then add the cups. Cook for another 5 minutes and season the stock with pepper.
  4. Divide the salmon, lemon zest and herbs over 4 pre-heated bowls and pour the stock with asparagus puffs. Serve the asparagus soup with the crème fraîche. Delicious with strips of toasted white bread.
