Asparagus wraps

Directions

  1. Peel the asparagus.
  2. Roast the pine nuts in a dry frying pan until golden brown.
  3. Bring a pot of water to the boil and add the white asparagus for about 8 minutes until they are al dente.
  4. Remove them and rinse them cold under the tap.
  5. Cook the green asparagus for about 4 minutes, then also rinse cold.
  6. Cut the peppers into long strips.
  7. Cut the slightly cooled white asparagus in half lengthwise.
  8. Spread the wraps with goat cheese and drizzle with 3 tablespoons of water each.
  9. Divide the pine nuts over the cheese.
  10. Put 3 white and 4 green asparagus on each wrap and spread the pepper over it.
  11. Sprinkle with salt and pepper.
  12. Roll up the wraps well and roll them up very tightly in plastic foil.
  13. Leave them in the cooler for at least 30 minutes before cutting them diagonally.
  14. Nice to take with you on picnic.
