Dab the aubergines dry with kitchen paper and brush with some sunflower oil.

Mix the flour on a plate with the Parmesan cheese and a pinch of salt.

Roll the aubergines on both sides through the flour mixture and press the breadcrumb layer a little.

Heat a layer of sunflower oil in a deep frying pan and fry the aubergine slices around golden brown.

Drizzle the aubergine tempura with honey and serve immediately.
