Mix the flour with 1 teaspoon of salt. Add the eggs, 200 ml water, curry paste and parsley and whisk until smooth.

Heat the frying oil to 180ºC. Mix the ingredients for the dip. Take the cauliflower florets through the batter and fry 4-5 florets at a time until golden brown.

Let them drain in a colander covered with kitchen paper. Serve the cauliflower fritters with the chilli dip.
