Directions

  1. Preheat the oven to 200ºC.
  2. In a bowl, mix the spinach with the eggs and crumble the feta above it. Add the dill, garlic, pine nuts and lemon zest and season with salt and pepper.
  3. Brush the sheets of filo pastry with the olive oil and scoop some of the spinach mixture on the bottom. Fold the upper right corner to the lower left corner and fold the points two more times until they are well-filled triangles.
  4. Repeat with the other sheets of filo dough until you have 10 triangles.
  5. Put the snacks on the baking sheet and bake the spanakopita in the oven in about 25 minutes until crispy and golden brown.
