Need extra: hand mixer.

Make sure the goat cheese is at room temperature.

Halve the grapes.

Chop the walnuts coarsely.

Crumble the goat's cheese over a bowl.

Pour in the whipped cream and add some pepper.

Beat everything with the hand mixer into an airy mousse.

Let the mousse in the refrigerator become firm in sixty minutes.

In a bowl, beat the vinegar and olive oil with a little salt and pepper to make a dressing.

Wash the lettuce, drain well in a colander.

Tear the leaves into pieces and scoop them with the arugula through the dressing.

Divide the salad over plates and spread the grapes and walnuts over it.

With a scoop of ice cream scoops in the middle of each plate, roll a large roll of roll-goat cheese mousse.
