Directions

  1. Pull the surimi chunks into two wires with two forks and chop them roughly.
  2. In a bowl, mix the mayonnaise with two tablespoons of orange juice, orange zest, paprika powder, chives and a tablespoon of basil.
  3. Add some salt and freshly ground pepper and put in the surimi.
  4. Halve the avocados and remove the seeds.
  5. Divide some arugula on the plates.
  6. Put the half avocados on the arugula and fill the cavities where the seeds were sitting generously with the surimi.
  7. Halve the to and put it on the surimi and garnish with a tuft of basil.
