Cut the winter carrot and celery into large pieces. Cut the leeks into thick pieces.

Prick the onions on a fork and keep them in a gas flame until the outside looks black. Let them cool down. Put the cloves in the onions.

Put the meat with the onions, garlic, carrot, leeks, celery, bay leaves and the soy sauce in a soup pan.

Pour the water in until all ingredients are under water. Add the (freshly ground) pepper and possibly salt to taste.

Bring the water to the boil with constant stirring. Stop stirring as soon as the stock starts to boil.

Place the lid diagonally on the pan, turn the heat down and let the broth for about two hours while gently boiling.

You can also longer: the longer the broth draws, the fuller the taste is. Place a clean tea towel in a colander and place it over a large pan.

Sieve the broth by carefully pouring it into the colander.
