Sweet and sour vegetable dish


A tasty Italian recipe. The vegetarian starter contains the following ingredients: eggplant (diced), olive oil, onion (coarsely chopped), celery (peeled and chopped), tasty tom tomatoes (in pieces), green olives (without pit, halved), pear (peeled and in cubes), almond shavings (55 g dish), capers, cinnamon stick, cloves, sugar and white wine vinegar.

Directions

  1. Sprinkle the eggplant cubes in a colander with salt and leave to stand for 1 hour.
  2. Then press out the moisture and pat dry.
  3. Heat 3 tablespoons of oil in a frying pan and fry the aubergine cubes around brown.
  4. Spoon on a plate.
  5. Put 1 tablespoon of oil in the same pan and fry the onion and celery in 3 minutes golden yellow.
  6. Put in the tomato, olives, pear, almonds and capers and add the cinnamon stick and the cloves.
  7. Put a lid on the pan and simmer for 20 minutes on low heat.
  8. Then scoop the aubergine with the sugar and vinegar through the vegetable mixture and let everything simmer for 15 minutes.
  9. Allow to cool and remove the cinnamon stick and the cloves.
  10. Tasty with toasted bread and raw ham..
