Spanish Gazpacho


Spanish cold soup with tomatoes, onion, garlic, paprika and tomato juice

Directions

  1. Bring water to a boil in a pan. Cross the tomatoes, immerse them for a few seconds in boiling water and rinse under cold water.
  2. Remove the tomatoes, cut them in half and remove the seeds.
  3. Chop the onion and press the garlic. Peel the cucumber and cut the crusts of the bread.
  4. Cut ⅓ of the cucumber, ⅓ of the peppers and 1 tomato into cubes and put them into bowls as a garnish. Cover the dishes.
  5. Cut the rest of the vegetables into coarse pieces. Puree in a food processor the vegetables with onion, garlic and 1 slice of bread.
  6. Add the tomato juice and season with the vinegar, oil, sugar, pepper and salt. Let the soup in refrigerator cold through.
  7. Cut the rest of the slices of bread into cubes. Heat the rest of the oil in a frying pan and fry the bread cubes light brown and crispy.
  8. Drain the croûtons on kitchen paper and place in a bowl.
  9. Pour the soup into a terrine and add ice cubes if necessary. Put the dishes with garnish.
  10. Put the soup at the table and add the garnishes according to your taste.
