Vegetable fries
A tasty recipe. The vegetarian starter contains the following ingredients: carrots, white asparagus (thin), broccoli florets, grated spicy cheese (50 g), orange, flour, mild curry powder, egg whites, oil for frying and old white bread (without crust).

Boil the carrots, asparagus and broccoli florets in a large pan with plenty of boiling water and a little salt in 3-4 minutes. Rinse the vegetables in a colander under cold running water and pat dry.

Clean the orange and grate the skin with a very fine grater. Mix on a plate the flour with the orange zest, the curry powder, 1-2 teaspoons of salt and pepper to taste. Beat the proteins in a deep plate.

Roll the vegetables through the flour piece by piece, shake off the excess flour and then pass them through the egg white and then through the bread mixture. The layer should not be too thick; you have to be able to see the vegetables.

Place 4-5 pieces of vegetables in the frying basket and let them sink into the hot fat. Fry them in 2-3 minutes until crispy and brown. Let the vegetables drain into a colander covered with kitchen paper.
