Preheat the oven to 200 ° C.

Prepare the guacamole with the avocado and the seasoning mix according to the instructions on the package of the mix.

Cut the avocado half in half. Remove the seeds and scoop out the flesh with a spoon from the peel. Cut into cubes.

Cut the tomato into half slices and the onion into thin half rings. Mix the avocado with the tomato, lamb's lettuce and onion.

Spread half of the tortillas with a thin layer of guacamole and spread the cheese over it. Place a second tortilla on each tortilla.

Place the tortillas, 2 at a time, on a baking sheet covered with parchment paper and bake them in the hot oven for about 8 minutes.

Cut the quesadillas with a sharp knife in four and divide them over the plates. Spoon the salad next to it. Serve the rest of the guacamole.
