Couscous salad with white cheese cubes
Salad of couscous, eggplant, snow peas, black olives, sundried tomatoes and white cheese cubes.

Prepare couscous according to directions on packaging. Clean eggplant and cut into cubes. Clean snow peas and cut into lozenges. Heat in pan oil and fry eggplant for about 10 minutes while stirring.

Fry pea pods last 2 minutes. Cut olives into rings. Spoon tomato sauce and olives through vegetables and let cool to lukewarm. Mix couscous with vegetable sauce and cheese cubes.

Season with salt and pepper. Lay on four plates. Spoon couscous salad. Tasty with roasted shawarma sandwiches.
